Rachael’s Balls Of Bliss

6999This is my friend Rachael Thompson.  She’s a complete fox, and a total power house business woman, yoga instructor, raw food expert, competitive Waka Ama paddler, marathon runner, wife, mother and grandmother, so I got her to come to the studio to talk about how she powers through life on great food and managed to get her favourite bliss ball recipe out of her!

Recipe for Rachael’s Balls Of Bliss

1 c cashews raw unsalted
1/2 c walnuts
1/4 c Sesame Sunflower Pumpkin seeds
1/3 c cacao powder 6 pitted fresh / medjool dates
1/2 c coconut
2Tbsp pure maple syrup
2Tbsp coconut oil
2Tbsp nut butter
Process nuts and dry coconut (if needed) in a processor/bullet until ground, set aside Process fresh dates until pieces, set aside Melt coconut oil, nut butter and maple syrup Combine ground nuts, coconut, cacao powder and ground fresh dates, then mix in melted liquids
Take a spoonful of mixture and press it together in one hand and try to roll into a ball, it should stick together easily, if not, it’s too dry so add a Tbsp or 2 of water, if it’s tacky it’s too wet and you could add some more ground nuts
Once ready to go, roll into balls, roll in desiccated coconut and continue until finished Put into a container in the fridge to harden for 20 minutes For variations on flavours you can add essence or honey to taste
