Dr Nic’s Zucchini Noodles Recipe
I popped in to see my Chiropractor for an adjustment the other week and we quickly got to talking about food.
Dr Nic, in my opinion, is a complete fox. She’s tall, she’s slender, has great style, eats uber healthy, runs or swims or goes sailing and is super clever. She’s also very unassuming and incredibly humble. Just an all round cool chick.
As I’ve been working through repairing my body from years of malnutrition, deficiencies and stress, Dr Nic has been working holistically to help me find my way back to wellness. I talked about feeling bloated and ‘puffy’ and we talked a little about what I’d been eating.
I’m not great with wheat to be honest and haven’t really eaten pasta for years because of it. Dr Nic shared with me her favourite zucchini noodle recipe and it has fast become not just a great food hack, but my new food addiction!! At least this is one that’s pretty darn good for you! Low carb and loaded with flavour, this is not a recipe as such, more an assembly of tasty ingredients. It’s fast, easy and covers all your food groups in one bowl.
Ingredients: (This is a single person serving)
- 1 medium zucchini
- 3 strips cut from a block of halloumi
- 1 tbsp olive oil for cooking, 1 tbsp for serving
- handful of chopped cherry tomatoes
- 1 tbsp pesto
You can peel the zucchini into ribbons using a vegetable peeler, however to make noodles you need a zucchini noodler. If you’re looking at buying one, contact me directly: email@example.com
