Guilt Free Chocolate
I’m a fan of raw and vegan / vegetarian food and am all about trying to eat healthy and make better choices. I’m also a fan of junk food and processed food and have really struggled over the years to find healthier alternatives for the foods that I adore. I’ve been put off trying to make some raw food recipes as they always seem to me to be too complicated or too expensive!! However, after a whole lot of research I’ve put together this easy to make and uber tasty raw chocolate recipe that you (or the kids) can make in a matter minutes. The great thing about this recipe is that there’s no nasties, no preservatives and wont mess with your blood sugars or lead to a carbo coma. You can even eat this for breakfast and it will give you that creamy chocolatey hit you’re craving when you have PMT, without all the after effects!! After making this, I’m convinced I’ll never eat any other chocolate again.
- 1/2 cup of coconut oil
- 1/2 cup of cacao powder
- 3 tbsp of honey (or you can use agave nectar, coconut nectar, real maple syrup or try liquid stevia)
- Other ingredients you want to add: peanuts, peanut butter, sesame seeds, brazil or hazelnuts (chopped or smashed), pistachios, rice bubbles, dried fruits (but be aware this will mess with your blood sugars if you’re sugar sensitive) etc.
Add the coconut oil, cacao powder and honey into a bowl that is sitting on top of a larger bowl of boiling water and wait for it all to melt down! The honey will sink to the bottom, so you may choose to use a hand blender to mix it all together. This also seemed to thicken the mixture slightly.
Add any additional ingredients (nuts etc) to moulds or silicon muffin trays and pour the chocolate over the top.
Place in the fridge for at least 30 minutes to set.
Eat and enjoy!!
